ColleStefano Verdicchio di Matelica

ColleStefano's Verdicchio de Matelica is an iconic dry white wine from the Marche region. The nose expresses bright, nervy, and savory aromas with vibrant lemon citrus, green herbs, fresh fennel, light floral notes, white peach, and almond skin. The palate is structurally acidic, with a steely minerality as the backbone; a saline and gravel edge follow through the mid-palate, to a long, acidic finish. The grapes were fermented in low-temperature stainless steel, and the wines aged for 4 months on the fine lees (sur lie) in steel vats without oak or malolactic fermentation. Some bottle aging occurred.

Food Pairing: raw fish dishes, oysters, fried calamari, grilled branzino with fennel and lemon, Adriatic fish stew, spring vegetable risotto with peas and mint, grilled asparagus with shaved cheese, pan-seared sea bass with lemon-thyme butter, chicken breast in a light citrus-herb sauce.
