This red fully embodies the playfulness typical of the Domaine, starting with the label: three different images that, when placed side by side, form the image of an octopus. The Chasselay family has been making wine in the village of Châtillon d'Azergues since 1464, and today siblings Fabien and Claire — trained under Bruno Clavelier in Vosne-Romanée — run one of the most thoughtful and lively natural estates in the Beaujolais des Pierres Dorées. Pourquoi Pas ("why not?") is their playful everyday cuvée: 100% Gamay from organically certified parcels on yellow sandstone and iron oxide soils, made by semi-carbonic maceration without destemming, fermented with native yeast and zero added sulfur, then aged in concrete tanks. The result is exactly what the name suggests — a fresh, juicy, fruit-forward red with an irresistible Beaujolais charm and a Burgundian sense of place. The nose reveals aromas of black and red fruit, as well as floral notes. The fragrance, accentuated by the carbonic maceration of the whole bunch, is intense on the palate, where persistence and juiciness are the hallmarks.
Food Pairing: Charcuterie, roast chicken, grilled sausages, light pasta, picnic fare.
