Françoise Bedel has been farming her 8-hectare estate in the Vallée de la Marne biodynamically since 1998, and Entre Ciel et Terre — "between heaven and earth" — is her signature cuvée and a statement of that philosophy. A Meunier-dominant blend grown on calcareous clay, it ages five years on lees before disgorgement and is bottled with minimal dosage. The result is a deeply expressive, complex Champagne: white flowers, acacia blossom, honey, spice bread, and orchard fruit on the nose; taut, precise, and bone dry on the palate with a laser-like mineral finish. One of the most singular and soulful grower Champagnes in production.
