Hakkaisan Brewery is one of Japan's most celebrated sake houses, anchored in Niigata Prefecture and shaped by its philosophy of using only the finest materials — specifically, the legendary Raiden spring water filtered through the foot of Mt. Hakkai. The Daiginjo 45 is their flagship premium expression: three sake rice varietals (Yamada Nishiki, Miyamanishiki, and Gohyakumangoku) all polished down to just 45% of the grain, with koji made entirely by hand. The result is internationally recognized as a benchmark of Niigata's signature crisp and clean brewing style — restrained and elegantly dry, with hints of steamed rice, delicate florality, and a pristine, invigorating finish.
