If you are not familiar with the grape Mauzac, included in this cepage, it is a grape indigenous to the Southwest of France in Limoux and Gaillac. It ripens late, so it is picked late when it has ample natural sugars to complete a second fermentation in the sparkling Methode Traditionelle.
