Nippon Seishu is a Hokkaido sake brewery, and the Chitose Tsuru ("thousand cranes of Chitose") label is their signature expression, made in the Junmai style — pure rice sake with no added distilled alcohol. Hokkaido's cold climate is ideal for slow, careful fermentation, and the region's pristine water sources are particularly prized in sake brewing. Junmai sakes tend toward drier, savory profiles with lower sweetness and higher umami compared to Ginjo styles, making them particularly food-friendly.
