Pierre Moncuit Delos Grand Cru Blanc de Blancs Brut NV is aged in stainless with malolactic, at least three years on the lees. Pear, apple, almond, chalk, brioche, white flowers; bright and full-bodied with a chalky undertow and a fine spine of acidity.
Pierre Moncuit and his wife Odile Moncuit-Delos founded the house in 1889; since 1977 Nicole Moncuit has run the vineyards and made the wine while her brother Yves handles the business, with Nicole's daughter Valérie now in the cellar. They're regarded as one of the two or three finest small growers in Le Mesnil-sur-Oger. Every bottling, including the non-vintage ones, comes from a single vintage — a deliberate choice to express the growing season rather than smooth it away.
Food pairing: Oysters and caviar if the occasion calls for it; otherwise roast chicken, gougères, aged comté, or good potato chips.
