Sakata Jokigen Junmai Ginjo

Sakata Shuzo is a respected brewery in Sakata City, Yamagata Prefecture — a region known for both its sake and its pristine water sources from the Chōkai volcanic mountain range. Jokigen ("excellent mood" or "in high spirits") is their Junmai Ginjo expression, made without added alcohol from rice polished to at least 60%, fermented slowly at low temperatures for maximum ginjo aroma development. The result is elegant and aromatic: clean floral and fruity ginjo character — think white peach, pear, and a gentle rice sweetness — with a balanced, refreshing finish.
