Septima Organic Malbec

Septima Organic Malbec derives from a high altitude vineyard, an important aspect that defines its features. Altitude does the work here: hot days, cold nights, and intense sun give Malbec its depth of color and ripe blue-fruit core while the diurnal swing keeps acidity intact. Expect plum and blackberry, violet, and a soft-textured finish with gentle oak spice.

Bodega Séptima sits in the Agrelo district of Luján de Cuyo, in the high desert under the Andes where Malbec found its second and better home. The name marks it as the seventh winery built by its Spanish parent company, and the building itself is stacked from local stone in the pirca method used by the Huarpe people.

Food pairing: Grilled steak, obviously — but also empanadas, chorizo, aubergine dishes, and hard aged cheeses.
