Mezcal

Smoked Watermelon

Watermelon is 92% water and tastes like almost nothing on its own. Mezcal is the thing that makes it taste like something — smoke against all that sweetness.

Ingredients

  • 2 ozMezcal
  • 3 ozFresh watermelon juice
  • ¾ ozFresh lime juice
  • PinchFlaky salt

Method

  • Blitz a few cups of watermelon and strain it. No sugar — it does not need any.
  • Shake mezcal, watermelon, lime and salt with ice for 10 seconds.
  • Strain over fresh ice. It separates as it sits, which is fine.

Peach Bellini

The whole drink is one ripe peach and good prosecco. It is only worth making in the weeks when the peaches are worth eating, which is most of July.

Ingredients

Method

  • Peel two ripe white peaches, blitz them smooth, and chill the purée hard.
  • Spoon the purée into the bottom of a cold flute.
  • Pour the prosecco slowly down the side, then stir once. Once.

Tequila

Frozen Margarita

Yes, a blender. Some drinks earn the machine, and in the last week of July this is one of them. Fresh lime only — the sour mix is what gave these a bad name.

Ingredients

Method

  • Salt half the rim, so whoever is drinking it can choose.
  • Everything into the blender with the ice. Run it 20 seconds, no longer.
  • Pour, do not spoon. If it holds a peak it has gone too far — add a splash of lime.

Vermouth

Vermut de Grifo

In Spain this is the drink before lunch on a Sunday, poured over ice with an olive in it. Low enough in alcohol that you can have one at noon and still have a day.

Ingredients

  • 3 ozRed vermouth
  • SplashSoda water
  • 1Orange slice
  • 1Green olive

Method

  • Fill a rocks glass with ice and let it sit a moment to chill the glass.
  • Pour the vermouth over, then a short splash of soda.
  • Orange slice in, olive in. Both of them, not one or the other.
