Produced by Carlos Mendez Blas in Santiago Matatlán, this is a blend of 70% Espadín and 30% Tobalá, distilled in copper pot stills after roasting in an underground stone horno and crushing with a horse-drawn tahona. Wild yeasts from the open-air environment shift batch to batch, making each release subtly unique.
