Delinquente Jaybird Macerato 2025

Delinquente Jaybird Macerato is a unique dry white blend that showcases stone fruit, tropical fruit, grape, and some spice. There is apricot roundness to soften the mouthfeel, giving way to acid and some tannin, and transitioning to a savory and lengthy finish. The Fiano is immediately pressed off the skins, and the Arinto and Malvasia ferment on skins for 10 days, while the Zibibbo is on the skins for 6 weeks. Malolactic fermentation was performed and the wines were allowed to settle a few days before bottling.
