Josef and Martina Ehmoser farm 17 hectares in the hamlet of Tiefenthal within Grossweikersdorf, a village 45 kilometers west of Vienna where the loess soils — up to 12 meters deep with 30% limestone content — impart the remarkable minerality and structure that distinguish Wagram wines. Weissburgunder (Pinot Blanc) has deep roots in this region, and Ehmoser's is fermented and aged on the gross lees in large traditional oak barrels of 1,500 and 3,000 liters — the only wine in their cellar to receive this treatment. The result has real breadth: white flowers, ripe pear, and a hint of marzipan on the nose, with a creamy, lees-driven texture, stony minerality, and a pleasing length on the finish. Certified sustainable; in organic conversion.
Food Pairing: Roast pork with sauerkraut, veal schnitzel, mushroom risotto, grilled white fish, aged soft cheese.
