Soellner Pet Nature

Söellner Pet Nature is cloudy, low in alcohol, dry, and lively — orchard fruit and citrus with a bready, yeasty undertow and a faint grip from the lees.

Weingut Söllner is run by Toni Söllner and Daniela Vigne in Gösing am Wagram; the estate has been in the family around a century and farms organically, on the deep loess terraces that define the Wagram. Pet-nat is the oldest method of making a sparkling wine and the least interventionist: the wine is bottled before its first fermentation has finished, under crown cap, so the remaining sugar throws its own bubbles with nothing added.

Food pairing: Fried chicken, charcuterie, cheese and pickles, brunch eggs, or Wiener schnitzel with lemon.
