Two Stacks Irish Whiskey Double Barrel 86

Two Stacks was founded in 2020 as a blender and bonder rather than a distillery — reviving an old Irish tradition where merchants bought casks from established distilleries, matured them under their own roof, and bottled under their own name, a practice nearly extinguished when the Irish whiskey industry collapsed in the early 20th century. The Double Barrel Single Malt vats three styles of malt: 10% peated, 50% triple-distilled, and 40% double-distilled, matured in ex-bourbon and ex-Oloroso sherry casks. Skurnik compares it to a peated Highland Scotch that kept Irish approachability — smoked orange, raisin, vanilla, roasted walnut, then fudge, marmalade, plum, and oak spice with smoke drifting through. 43% ABV.
