llámalo X Tierra de Castilla Cencibel is a dry red wine that expresses lush texture through notes of blackberry and currant, followed by a long, dry finish. Cencibel, as noted in the name, is the local strain of Tempranillo. The viticulture follows an ecological philosophy, without the use of any synthetics. The varieties are destemmed and fermented separately in stainless steel. Macerations last for 5 days. The pressed wines are aged for 3 months in centenarian locally made clay tinajas, followed by 2 months in used French barrels. No fining or filtration.
