A slightly softer style of Cabernet Franc, from the malolactic fermentation, that ferments, macerates, and ages in cement vats. On the nose, it is ripe, black and red fruit with a touch of anise and herbaceous notes. Much of the same carries through to the palate, with added crunchy, red fruit and light, approachable tannins. Medium-bodied. The Lamberts have been vinifying Cabernet Franc and Chenin Blanc since 1987, and they became officially certified in organic and biodynamic farming in 2012, having practiced since 2005. Their horse, Isis, helps them plow and harvest the vineyards, allowing them to eschew use of tractors to maintain their firm commitment as stewards of the land.
