Birichino Wines Malvasia Bianca Monterey

Birichino Wines Malvasia Bianca Monterey is a perfect balance of crisp and aromatic in a dry white wine. It is brightly citrus-driven, softened by jasmine floral notes to yield a balanced wine. One of the reasons for this Malvasia retaining its acidity to such a crisp degree is due to the micro-climate where it grows–it is from sandy shale soils on the western flank of the Santa Lucia Range in Monterey. which has wtrong exposure to Pacific oceanic influences. The cooling effect from the Monterey Canyon, just offshore of Monterey Bay: the depth of water is so extensive that it pools cold Pacific water, and the winds flowing off the ocean carry cooling temperatures into the wine growing regions.

For this wine, a nighttime machine harvest is employed at their direction, resulting in 12 to 14 hours of skin-maceration for maximum aromatic potential. The wine is fermented low and slow in stainless steel until dry, and is kept on its fine lees without stirring for four to five months before bottling.
