Cantine Olivella was founded in 2004 by winemaker Andrea Cozzolino (now managed by Ciro Giordano) on the northwestern slopes of Mount Somma — the oldest part of the Vesuvius volcanic complex — within the Vesuvius National Park, at 300–650 meters above sea level. The Lacrimabianco is built on two indigenous varieties exclusive to the Vesuvius area: Caprettone, prized for its aromatic elegance, and Catalanesca, believed to have arrived from Catalonia in the 15th century via Alfonso I of Aragon. Ungrafted vines root into the dark, sandy, mineral-rich volcanic soil without irrigation. Organically certified, fermented in stainless steel and released with a few months of additional bottle aging, the wine shows white flowers, citrus zest, yellow stone fruit, and a pleasant mineral-volcanic thread that runs through the entire tasting. One of Campania's most singular and historically resonant whites.
Food Pairings: Grilled branzino, spaghetti alle vongole, pizza bianca, tuna carpaccio, risotto with vegetables, fresh mozzarella, lightly spiced chicken dishes
