Castello di Stefanago Provincia di Pavia Rosso

From a 14th-century castle estate in the Oltrepo Pavese hills of Lombardy, where Antonio and Giacomo Baruffaldi farm organically at 320–470 meters above sea level, surrounded by forests, orchards, and meadows that are as much a part of their philosophy as the vines. The Provincia di Pavia Rosso is built around Uva Rara — literally "rare grape," a native Lombard variety rarely seen outside the region — alongside Croatina and Merlot. Hand-harvested parcels are spontaneously fermented and aged in stainless steel, producing a medium-bodied, unoaked red with bright cherry, raspberry, violet, and a fresh herbal edge. The kind of bottle that disappears quickly, with or without a slight chill.
