Des Jus et Du Lien Papi Jean Rouge

Papi Jean rouge is a dry blend of 50% Cabernet Franc and 50% Cabernet Sauvignon, the racy acidity in the front of the palate creating an illusion of light effervescence. The aromas of the wine feature red currant and spice. On the palate is an array of notes including tart waves of red and purple fruit, savory herbal notes, green stem, pencil lead, stewed plum, and mulberry. The texture of this feels glou gloui–it is juicy and vibrant with supple tannin. There is approximately 10 days of maceration using partial whole clusters, then the free run juice is blended with early and mid-press juices.
