Domain Ludovic Bonnardot's 'Sur Le Bois,' from Maranges in the renown Côte de Beaune, is a dry red wine that showcases the elegance and lightness of Pinot Noir. This wine leans toward a savory palate with notes of dried mint, licorice, cardamom and nutmeg inter-weaving through notes of blueberry skin and strawberry. The silky tannins run parallel with bright acidity. Drink now or age until 2030.
The grapes are hand-harvested from an organic vineyard in Cheilly, and then thety are vinified in Burgundian wood tanks. All grapes are de-stemmed before vinification, and they soak for 6 days before a 27-day maceration. The wine rests on the lees for one year and then ages for another year in 228L oak casks averaging 1-7 years.
