Evening Land Pinot Noir Seven Springs emits a potpourri of wild berries, minty herbs, and autumn spices; then, it delivers silky red and blue fruit, swirling beneath chalky mineral notes and lavender, on the palate. There is a light chewy elasticity in the tannin, amid the fresh acidity that carries through the finish.
The Pinot Noir is sourced form the winery's oldest root stock block at Seven Springs Vineyard, located in Eola-Amity Hills AVA; the vines are 40-years old. 15% whole cluster pressing before fermentation in closed top concrete vats. No punch downs or pump overs. Aged 12 months in neutral French barrique.
Food Pairing: salmon, tuna steak, roast duck, squab, herb-roasted chicken thighs, pork tenderloin with a berry reduction, sauteed chanterelle, roasted carrot, roasted beets
