Cantina Valtidone's aperitivo wine that is aromatic and decidedly forward: a floral bouquet with persistent exotic fruit — mango and papaya, then fresh and enveloping on the palate with a delicate mineral point on the finish. Soft pressing, a slow cold fermentation at 16–18°C in stainless to protect the perfume, then time on fine lees to build roundness before cold sterile bottling.
