A co-fermented field blend from Maison Yves Duport, a four-generation family estate in Bugey — the rugged, under-the-radar appellation tucked between the Jura and Savoie in the French Alps. Céline is equal parts Chardonnay and Gamay, with 20% Mondeuse, harvested from 25–35-year-old biodynamically farmed vines rooted in clay-limestone soils. Fermentation is spontaneous with indigenous yeasts over three weeks in stainless steel. The color is a deep rhubarb that defies easy categorization — somewhere between a dark rosé and a light red — with aromas of wild cherry, blueberry, and a fresh minty lift, and a palate of ripe red currants, small plums, zingy citrus, and minerality. Made without additions, without sulfites, without fuss. Best served slightly chilled, best consumed in good company.
Food Pairings: Diots (Savoyard sausage), raclette, grilled chicken, turkey, charcuterie and cheese boards, roasted beets
