Terre Di Marca Prosecco

The Corvezzo family have been pioneers of organic viticulture in Treviso for over half a century, with Giovanni and Katia Corvezzo beginning to experiment with sustainable farming in the 1970s. Millesimato means it comes from a single harvest rather than a blend of years, and Extra Dry sits at 12–17 g/L of sugar — drier than it sounds, but softer than a Brut. Glera's Muscat-like terpene aromatics come through with unusual clarity here: explosive fresh apricot, floral lily, a touch of white pepper, soft and creamy on the palate with acidity holding the residual sugar in check.

Food pairing: Charcuterie and mild cheeses, herbed prawns, oysters with shallot vinegar, scallops — or as the aperitivo it was built to be.
