A naturally made sparkling Refosco. Think undisgorged Champagne method light red sparkling wine. Darker than a rose, playful strawberry and spice aromas, friendly and amazingly refreshing on the palate, with bright acidity and soft tannins. Certified organic. Serve it cold as an aperitif, with charcuterie, young cheeses, or not so sweet panna cotta or strawberry cheesecake.
Hand-harvested grapes go through a quick 1-hour maceration period, ferment naturally and age for 12 months in stainless steel tanks. Next harvest, unfermented Refošk is added to the wine and secondary fermentation begins. The fermenting wine is then bottled with crown caps, natural fermentation continues in the bottles. The wine is not disgorged, hence the “col fondo” sediment.
